Ingredients

3-4 medium sweet potatoes

500g turkey mince

1 green pepper (diced)

1 red onion (diced)

3-4 red chilis (finely chopped)

2 cloves garlic (finely chopped)

1 tsp paprika

salt and pepper (to taste)

2 tbsp extra virgin olive oil (or coconut oil)

?

Method

1. Preheat oven to 180 degrees C.

2. Cut the sweet potatoes in half lengthways, place with the skin-side up on a greased baking tray and bake in the oven for about 30?minutes (until the potato in the centre is soft enough to scoop out with a spoon).

3. While the potatoes are baking, heat the oil in a large frying pan or saucepan and fry the peppers, onion, garlic and chilli until softened.

4. Add the turkey mince to the pan, along with the paprika and seasoning, and heat until the turkey is cooked through.

5. Once the potatoes are cooked, scoop out the insides with a spoon.

6. Mix the scooped-out potato with the turkey mix in the frying pan.

7. Stuff the potato skins with the turkey/potato mix (really load them up!) then place them back on the baking tray (skin-side down this time) and bake for 10-15 minutes (or until the filling starts to brown).

8. Serve and enjoy!
